This salad is filling enough to serve as a meal. Black beans & Chorizo sausage provide protein and sweet potatoes are a filling, healthy option as the salad base. Poblano chillies can be grown at home however you can use any colour capsicum as a substitute.

Play around with the ingredients (eg~ add avocado, sweet corn, red onion, spicy jalapenos, chicken, feta cheese or whatever tickles your fancy). If you wish to serve as a side dish only omit the chorizo or even the beans if you wish to keep it simple 


Mexican Sweet Potato, Black Bean, Chorizo Salad

  1. 200g whole sweet potato, peeled
  2. 1/2 cup black beans
  3. 1/2 cup chopped spring onion
  4. 1 tbspn chopped coriander
  5. 1 large chorizo
  6. 5 poblano chillies, roasted & sliced (or substitute green capsicum)
  1. 1 chopped chipotle chilli in adobo sauce
  2. 1/4 cup greek yoghurt
  3. juice of 1 lime
  4. 1 tsp ground cumin
  5. salt & pepper
  1. Bring potatoes to a boil in a large pot of water
  2. After 10 minutes test potato by inserting a knife, Once potatoes are just cooked remove and drain under cold water. Cool
  3. Once cooled cut potatoes into chunky cubes and place in a mixing bowl
  4. Stir through black beans, spring onion & coriander
  5. Whisk dressing ingredients and stir through potato salad
  6. Refrigerate at least 2 hours
  7. Just prior to serving chop chorizo into slices and fry in oil until crisp
  8. Set aside to cool 15 minutes
  9. Remove potato salad from fridge
  10. Top with chorizo
  11. Serve
