A classic hearty warming dessert. The cake batter can be premade a few hours prior to cooking / serving and the sauce is so so simple to whip together last minute. I really don’t think you can go wrong with the delicious dessert


OPTIONAL ACCOMPANIMENTS : whipped cream, ice cream, custard,  strawberries


Sticky Date Pudding

  1. 200 grams dates
  2. 250 ml water
  3. 60g unsalted butter, slightly melted
  4. 2 eggs, whisked
  5. 200g caster sugar
  6. 200g self raising flour
  7. 1/2 tspn vanilla essence
  1. 150g brown sugar
  2. 150g thickened cream
  3. 130g unsalted butter
  4. 1 tspn vanilla essence
  1. Preheat oven to 180 deg C
  2. Boil the dates in water approx 10 minutes until a thick mixture forms, set aside to cool (approx 20 mins)
  3. Stir together butter, eggs, sugar, flour and vanilla in a large mixing bowl
  4. Once dates have cooled stir into mixing bowl
  5. Transfer to a shallow baking dish and bake in oven approx 25 minutes
  6. In the meantime prepare the sauce
  1. In a small saucepan stir all ingredients until combined well over low heat (approx 10 minutes)
  2. Remove pudding from oven, cool 5 minutes
  3. Cut into serving size pieces and place on a plate or bowl, top with sauce
  4. serve
