These black bean tacos are quick to prepare and great for breakfast, lunch and (even better) an invigorating post work out meal. I often chuck in leftover scraps (eg~ some shredded pork, chicken, veggies etc)



Black Bean & Corn Tacos

  1. 1 Cup Black beans (canned or dried;soaked and boiled for 1/2 hour)
  2. 3/4 cup corn kernels (canned or fresh)
  3. 1/2 red onion, finely chopped
  4. 1 tbspn chipotle chillies in adobo sauce
  5. 1 tsp smoky paprika
  6. mini soft corn tortillas
  1. 1/4 cup parmesan cheese
  2. sliced jalapenos
  3. avocado
  4. coriander
  5. lime wedges
  1. Heat a little oil in a saucepan
  2. Add in red onion & chipotle chillies, stir for 2 minutes
  3. Add in black beans, corn, paprika and 1/4 cup water
  4. Stir cooking for around 5 minutes until the mixture thickens
  5. Transfer to a bowl and set aside
  6. Spray a clean pan with a little oil and fry corn tortillas until warm
  7. Place tortillas on a plate and scoop on black bean mix
  8. Garnish with Parmesan, jalapenos, avocado, coriander and a little lime juice
  9. Serve
