Whole Mini apples in a rustic gingerbread spiced cake. Gewurzhaus sell this amazing gingerbread spice mix (pictured below) and I highly recommend purchasing some from their online store. However you can alternately use your own spice mixture (refer recipe) 









German Apple Gingerbread Cake

  1. 8 baby apples, peeled, cored
  2. 130g unsalted butter
  3. 130g caster sugar
  4. 3 eggs
  5. 130g self raising flour
  6. 1 tspn Gewurzhaus's Gingerbread spice (see note)
  7. butter for greasing 20 cm diameter cake tin
  8. icing sugar to dust
  1. Beat butter & sugar with an electric beater approx 2 minutes until fluffy and combined
  2. Stir in eggs on low speed until combined
  3. whisk in flour and add gingerbread spice, combine well
  4. peel the whole baby apples
  5. grease the cake tin with butter
  6. add in half the cake mix
  7. place in the whole baby apples, evenly spaced
  8. add on remaining cake batter and smooth over with a spatula
  9. cook in oven for 1 hour (testing with a skewer to ensure cooked through)
  10. Cool for 1/2 hour
  11. dust with icing sugar
  12. serve

  2. Alternately if you have no time instead of the spice mix use a mix of cinnamon, ginger & nutmeg to achieve a similar taste
