Simple and Effective. A German Appetiser I concocted with inspiration from a German platter I was served at the amazing Oktoberfest Festival. The locals explained the recipe to me. It is simply a mashed potato dip smothered on a piece of rye bread and doused with salt and pepper. The more salt and pepper the better (they insisted).  You will need a good quality sea salt for this one so it is not overpowering and ground black pepper works best. My version has a sliver of radish and a teeny garnish of dill.

Ingredients
  1. 6 slices rye bread, halved
  2. 2 potatoes
  3. 1 tbspn cream
  4. 2 tbspn sour cream or yogurt
  5. 1/2 white onion, minced
  6. plenty of sea salt and ground pepper
  7. 1 x radish thinly sliced
  8. dill to garnish
Instructions
  1. Peel and boil potatoes until soft
  2. mash and add cream & cream
  3. stir in onion, salt & pepper
  4. lightly toast rye bread
  5. Cool bread for 5 minutes
  6. with a spoon scoop on a generous amount of the potato dip
  7. place a slice of radish on top and garnish with dill
  8. sprinkle with PLENTY of salt and pepper (this is essential)
